Tasty Bites - Restaurant Worthy Lemon Ricotta Pancakes
These pancakes are the ultimate - soft, flavorful, even healthy! I first made them a few years ago when I purchased Williams-Sonoma's Essentials of Healthful Cooking Cookbook. Last weekend I made them for my boyfriend for the first time. "...like a restaurant," he said, "The flavor, the texture!" Yum.
P.S. There's only 1 1/2 cup flour in the whole recipe. They're mostly ricotta. I'd bet these could go gluten-free pretty well.
